Rosh HaShanah, with all its special foods and traditions. Apples are dipped in honey in the hopes of a sweet year ahead. Challahs are coiled into a circle and often contain raisins, symbolizing wishes for a well-rounded, sweet and wholesome year.

Apple Bars (D, TNT)

Yield: 1"x16" cookie sheet Ingredients:
Crust:
3 cups flour
1/2 tsp. salt
1 cup shortening
1 egg, separated
1/2 cup milk
Filling:
6 cups peeled apples
1/2 cup honey
1 cup sugar
4 tbsp. flour
2 tsp. cinnamon
1/4 cup butter or margarine
Glaze:
1-1/2 cups powdered sugar
1 dash salt
1 tsp. vanilla
2 to 3 tbsp. milk
Make Crust:
Beat egg yolk, combine with milk and cut into remaining ingredients.
Divide dough in half and roll each to fit an 1"x16" cookie sheet. Place half of rolled dough in bottom of sheet.
Make Filling:
Arrange apple slices evenly on crust. Drizzle with honey. Combine sugar, flour and cinnamon and sprinkle over top of apples.
Top with cut up butter or margarine and cover with remaining rolled out dough, pressing together bottom and top of dough edges. Brush top crust with reserved egg white.
Bake at 350°F for about 45 minutes or until bubbly and crust is browned.
While still warm, glaze with the glaze ingredients whisked together until smooth.

Apple Spice Cake
INGREDIENTS
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon salt
1 cup butter, softened
2 cups white sugar
4 eggs
1 teaspoon baking soda
1 tablespoon warm water
1 teaspoon vanilla extract
3 apples - peeled, cored and chopped
1/2 cup raisins
1/4 cup confectioners' sugar for dusting
DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.

2. Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.

3. Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.
